“The entire exhaust system shall be inspected by a properly trained, qualified and certified company or person(s) acceptable to the authority having jurisdiction in accordance with this Exhaust System Inspection Schedule.”
- Monthly- systems serving solid fuel cooking operations.
- Quarterly- Systems serving high- volume cooking operations, such as 24 hour cooking, charbroiling or wok cooking.
- Semi-Annual- Systems serving moderate-volume cooking operations.
- Annually- Systems serving low-volume operations such as churches, day camps or seasonal businesses.
“Upon inspection, if found to be contaminated with deposits from grease laden vapors, the entire exhaust system shall be cleaned by a properly trained, qualified and certified company or person(s) acceptable to the authority having jurisdiction. Hoods, grease removal devices, fans and ducts shall be cleaned to bare metal prior to the surfaces becoming heavily contaminated with grease or oily sludge.”

Our experience has shown that cooking operations will need to be cleaned on the same schedule as the required inspection so as not to become contaminated with greasy buildup.
